what's cooking in my kitchen?

fish!

the past couple of meals we’ve prepared a few fish favorites.

ew. that kinda sounds gross, but i promise you that these dishes were far from disgusting. here have been some of our recent “throw whatever we have in the kitchen together and see how it turns out” food projects.

{numero uno}
marinated tilapia with green peppers & mushrooms over alfredo orzo.

so yeah this was kinda the bomb. i would say it’s my favorite out of these three, but i can’t really commit to that, but top two definitely.

we marinated some tilapia over night with a “marinade” lee threw together in a bag which consisted of lemon pepper, cayenne, smoked paprika, garlic powder, cilantro, olive oil & lowry’s herb & garlic sauce.

i boiled some orzo, drained, and added just a few tablespoons of gluten-free alfredo sauce. baked the fish on 350 for about 20 mins. delish!

{numbero dos.}
sesame glazed salmon over a bed of cilantro rice.

this one was allllll lee. he made this as a post valentines day lunch and it was awesome.

he added some sesame seasoning and brown sugar glaze over salmon and baked on 350. he thinly cut up some cilantro and mixed in with rice and served. so easy, you guys!

{number tres.}
feta and parmesean crusted tilapia with linguini & vodka sauce.

i winged the heck outta this. i cracked an egg and scrambled so the fish could be coated, then laid it in a plate with flour, oregano, parsley, garlic powder, paprika, & old bay seasoning. the sprinkled the fish with parmesan cheese and topped with feta. i poured the remaining egg on top just for fun.

baked at 350 for 20 mins. broiled for about 3 minutes just to toast the cheese.

boiled the pasta & added vodka sauce and bam!

i have really enjoyed cooking again and love sharing some successes with you guys! can you tell we are complete spice finatics?
