pumpkin banana muffins.

i first heard about this recipe from becky at made in the shade blog. hers were slightly different. i didn't have exactly the same ingredients as she did. i changed out the yogurt for greek yogurt and the wheat flour for regular flour and a few other things organic, but hey - the end result was probably just the same.

after tasting these, i knew i had to share it with y'all.


1 can of pureed organic pumpkin
 1 egg & 1 egg white
1 tablespoon of baking soda
sprinkle of salt
1/2 cup of nonfat greek yogurt
1 smashed banana
1/2 cup of sugar free organic applesauce
2 cups of flour
1 cup of white sugar
 
preheat your oven to 350, mix everything in a bowl, spray your muffin pan with non-stick spray (this is important because they will stick to muffin paper; but with the non-stick spray, they come right out), and bake for about 20 minutes.
 
i made a smorgasbord of them & the guys even digged in for breakfast that week. pop them in the microwave for 15 seconds and they are just like to took them out of the oven. i may be making a grocery store run this afternoon....
